Instapot Mashed Potatoes

Want to still enjoy the benefits of bone broth during the summer months but not in the mood for soup? Some ideas include: gazpacho, cooking the meats in broth then adding them to lettuce wraps; con queso dip for chips & veggies; cooking grains in broth before making a dish like quinoa salad or authentic Mexican rice or even a creamy risotto. Here is a great idea to incorporate some homemade bone broth into your weekly menu.

Mashed Potatoes

Ingredients:

5 lbs organic potatoes (washed and quartered)

1 cup pastured organic homemade bone broth

1 tsp Celtic salt

Method:

Add all ingredients to the Instapot. Cover with valve sealed. Use the manual setting on high for 10 minutes. Do a quick release. Add butter and mash before serving. Enjoy!
