Creamy Italian Dressing

If you haven’t seen the Back to Eden film, you really ought to. And that’s all there is to it. Now, about the dressing…

Creamy Italian Dressing 

Makes about 4 cups


  • 5 pastured egg yolks
  • 1/4 cup flax oil
  • 1 cup olive oil
  • 2 cups cultured buttermilk (or kefir or yogurt or clabbered milk – whatever dairy ferment is in abundance)
  • 1-2 tsp Real Salt (or pink)
  • 2 large garlic cloves, put through a press
  • 1/4 cup raw honey, or more to taste
  • 1-2 TB raw apple cider vinegar, or lemon juice, or coconut vinegar
  • splash of whatever herbs you like – I used dried basil and cilantro


Throw it all in the Blendtec/Vitamix and blend really well. Pour into recycled glass bottles with a narrow neck/mouth for easy pouring. Enjoy!
